I had two big hogs butchered here last fall. (2023)
$700 worth of butchering.
The cured meats had a terrible taste. Almost like it had no cure.
The bacon was cut very inconsistent, but I'm more worried about the taste.
The sausage was very salty.
And...to top it off, my co-worker got a hog butchered at the same time, and he has complained about the same thing.
He explained it, as the cure tasted stale.
